Every insect on the ENTOMO menu is raised in certified organic micro-farms within 200km of Copenhagen. We partner exclusively with farms that adhere to insect welfare standards developed by our culinary science team.

The insects are fed on organic vegetable offcuts, brewer's grains, and seasonal greens — closing the food loop completely.

Executive Chef & Co-Founder
Formerly of Noma and El Celler de Can Roca, Astrid spent three years traveling Southeast Asia studying traditional insect cookery before founding ENTOMO. Her philosophy: insects are not a novelty — they are humanity's oldest protein source, reclaimed.

Head Chef & Research Director
A trained biochemist turned chef, Keiichi's dual expertise allows him to approach insect cuisine with scientific precision. He developed ENTOMO's proprietary fermentation techniques for mealworm miso and cricket garum, unlocking flavor compounds previously undocumented in food science.
