Dawn Harvest

Each flower opens for a single morning. Our harvesters begin before sunrise, picking crocus blooms by hand in the cool October air to preserve the delicate stigmas.

Hand Separation

Three crimson threads from each flower are gently separated by skilled hands. No machine can replicate the precision and care required to preserve the full aromatic profile.

Natural Drying

Freshly separated stigmas are dried over low heat in traditional kilns. This ancient method concentrates the safranal and crocin compounds that define exceptional saffron.

From Bulb to Table

Five precise stages transform the crocus flower into the world's most prized spice.

Planting

Corms are planted by hand in late summer. Each bulb is placed at the correct depth and spacing to ensure optimal flowering the following October.

Flowering

For two weeks each October, the purple crocus blooms open in the morning light. The harvest window is brief — each flower lasts just one day.

Dawn Picking

Harvesters begin at 5am, picking flowers before they fully open. Speed is essential — the longer stigmas are exposed to sunlight, the more the aroma diminishes.

Separation

Fresh flowers are brought inside immediately. Women with nimble fingers separate the three crimson stigmas from each bloom — 70,000 flowers yield just one kilogram.

Grading

Dried threads are graded against ISO 3632 standards. Only threads scoring above 270 coloring strength are designated Super Negin — our finest grade.

First recorded cultivation in ancient Persia. Saffron threads woven into royal textiles and offered at temple ceremonies.
550 BCE
Cyrus the Great spreads saffron trade across the Persian Empire. It becomes more valuable than gold by weight.
900 CE
Islamic Golden Age scholars document saffron's medicinal properties. Persian physicians prescribe it for over 90 conditions.
Today
Iran produces 90% of the world's saffron. Khorasan province remains the undisputed origin of the finest threads on Earth.
