Oscietra
Noir

Time, distilled to a single pearl.

At Oscietra Noir, we believe the finest things in the world are not purchased — they are arrived at. Born from the cold depths of pristine waters and coaxed to perfection over years, not seasons, our caviar is a meditation on patience. Each tin is not a product. It is a timestamp: the culmination of an ecosystem, a craft, and a philosophy that refuses to hurry.

Where the pearl
begins.

Waters

Every pearl carries the chemical memory of the water in which it formed. This is not poetry — it is biochemistry. We source from three distinct bodies of water, each yielding a flavour signature as distinct as a vintage.

I. The Caspian Basin
Our founding waters. Cold, mineral-dense, with ancient saline stratification. Produces our flagship Oscietra and the Blanc de Blancs: complex, deep, and austere.
II. The Adriatic
Warmer, with higher calcium content from limestone seabed. Imparts a silken, nutty sweetness to our Dorée expression — the most approachable pearl in the collection.
III. The Amur River
Fed by glacial snowmelt across Siberia. The coldest origin in our portfolio. The Siberian Impérial reflects its source: clean, mineral, uncompromising.
The Craft

Three acts of
transformation.

Harvest
Act I · The Waters
Harvest
Selected by hand. Each sturgeon assessed individually. The harvest window: 72 hours at most.
Selection
Act II · The Hand
Selection
Pearl by pearl, graded for size, lustre, and membrane integrity. Only the top 8% advance to filling.
Sealing
Act III · The Seal
Completion
Sealed under atmospheric control. Batch number stamped. Harvest year and water origin inscribed. Done.
The Ritual
Tasting ritual

"A pearl deserves a partner that asks nothing of it, only listens."

Oscietra Noir. Billecart-Salmon Blanc de Blancs.
Nuit Profonde. Beluga Vodka, single measure.
Siberian Impérial. Crème fraîche. Nothing else.
Oscietra Dorée. Sourdough. Cultured butter.
Blanc de Blancs. Silence. A mother-of-pearl spoon.
The Lineage

A century of
not hurrying.

1921
The Foundation

Édouard Leclair establishes the Maison on the shores of the Caspian with a single principle: no harvest before the pearl is ready. The founding ledger contains one entry for the first season: "Waited."

1954
The Adriatic Accord

Third-generation Maison masters travel to the Adriatic coastline. A new strain of oscietra — with a distinctly silken character — is identified and cultivated. The Dorée expression is conceived.

1978
The White Pearl

A chance mutation in the Caspian stock produces an albino clutch with extraordinary flavour depth. The Blanc de Blancs programme begins. The first commercial release will not come for sixteen years.

2008
The Amur Expedition

Maison researchers travel to the Amur River basin in Siberia. The cold mineral character of the water is unlike anything in the portfolio. The Siberian Impérial programme is established.

2024
The Réserve Privée

The Maison opens a bespoke commission programme for the first time in its history. A maximum of twelve private clients per year. Each tin bears their name. The concierge answers personally.
